That is, it's more "I'm so goddamn rich that I can afford to pay not only for the raw fish and the expertise that goes into its selection and preparation, but I can also afford to pay for this human being to serve as an inaninmate object to keep our expensive fish off of the floor while we're eating it," and less "Wow, this table is totally giving me a boner." The next step would be to pay for someone to chew the food for you so that you didn't have to do it yourself.
